Product description "Ripened / Cooked" pu-erh tea produced in Yunnan, China is specially processed to imitate aged "raw" pu-erh tea. The process used manipulates conditions to approximate the result of the aging process by prolonged bacterial and fungal fermentation in a warm humid environment under controlled conditions, a technique called "wet piling", which involves piling, dampening, and turning the tea leaves. The piling, wetting, and mixing of the piled tea ensures even fermentation. The ripening process typically takes anywhere from half to a whole a year. This tea produces a dark red cup, with milder earthy flavour due to its processing. The leaves are reddish-brown. Known for many health benefits. Pu Erh tea gets its name from a small town located in southern Yunnan. Tea had been cultivated in this part of China for about four thousand years. Its popularity owes much to the many trade routes that flowed through this region. Pu Erh teas have been offered in tribute to many a generation of Chinese emperors.
